Ingredients for 6 people: 3 small eggplants, sliced vertically olive oil 1 jar Scarpetta Sauce by Tartuflanghe 1 fresh mozarella salt and freshly ground black pepper Preparation: Cut the eggplants into slices. Rub them with some olive oil until they are well coated. Preheat the oven to 180°C and bake the eggplants for 15 minutes, or until soft. Add 1 tbsp of Scarpetta Sauce and 1 slice of mozzarella and on each slice. Once the slices of mozzarella are a little bit melted, serve the eggplants immediately.
